Longterm fermented miso with special ingredients
This miso has started to ferment in the coldest winter. Koji and yeasts make miso taste richer and mild slowly. Fermented and aged in the nature without temperature control. It means this miso has the memory of growing in Toyama.
Ingredients are all from Toyama. Rice brand is "Tenkomori",late maturing variety. Soybean brand is "Enrei" having sweet and rich taste.
