Toyama Prefecture
is blessed with good water. Through rivers and underground water
veins, the snow on top of the Central Alps supplies water rich
in minerals for the ground of Toyama. From the ground, we can
obtain rice, soybeans, various vegetables and edible wild plants.
Moreover, the water which has absorbed the nutritive resources
of the ground flows into Toyama Bay and gives us an abundant
supply of marine resources, such as very fresh fish which are
known by its name "Kito Kito" fish in the dialect
of Toyama.
We benefit a lot from nature, which makes the food culture
of Toyama varied and full of indi-viduality. The blessings of
nature in Toyama are indispensable also in the production of
soybean paste and soy sauce. We would like to appreciate and
protect the kindly fruits of nature which our ancestors have
left and devote ourselves to daily production so that we can
hand them over to the next generation.
